Piccole cupole di colore bianco, dalla superfice ruvida, con un bordo più spesso rispetto a un centro sottile è nata dall’incontro della semola di grano duro e acqua, la cui forma, ottenuta con un veloce gesto delle dita che trascina la pasta sul piano di lavoro, assomiglia vagamente a quella di piccole orecchie. Da questa particolare forma deriva naturalmente il nome con cui è conosciuta oggi questa pasta.

From this particular shape naturally derives the name by which this pasta is known today.
